For those of you who are not wild about lettuce, there are a variety of healthy vegetable salads to try.

Horiatiki salad uses many healthy ingredients in a traditional Greek salad. "Horiatiki means village, which is why it’s also referred to as Greek village salad. It consists of tomatoes, cucumbers, onion, kalamata olives, feta cheese, and is dressed simply with vinegar, oil and is finished with oregano." (Marcie, 2022).
Trust me when I say this salad is delicious and easy to adjust to your taste. We omitted the red wine vinegar (simply because we had none on hand), and we added extra cubed Feta Cheese (because we are cheese lovers ❤️).
We also enjoyed ours with some scrumptious warm homemade wheat bread and butter. You can experiment with adding or omitting ingredients and still have a healthy, delicious, lettuce-free salad you will love!
Classic Green Salad: A Fresh Staple

For instance, as we discussed earlier, the classic Greek salad, known as Horiatiki, features fresh tomatoes, cucumbers, red onions, olives, and feta cheese, all drizzled with olive oil and sprinkled with oregano, showcasing the Mediterranean's bountiful produce and the importance of olive oil in Greek cuisine.
In contrast, the vibrant Thai salad called Som Tum, made primarily from green papaya, tomatoes, green beans, and peanuts, is a perfect representation of the balance of flavors that Thai cooking is renowned for, combining sweet, sour, salty, and spicy elements in every bite.
